New Jersey's lack of forage makes producing comb honey in any volume a challenge. But you shouldn't miss out. The comb is tender; the honey has a lovely light amber hue, a rich aroma and a mild flavor. Gallberry is slow to crystallize, so if it lasts, you can use it on a holiday cheeseboard. Odds are that it won't. $20 for a 10 oz. slab. Packed in a clear plastic box.
